Ghatte ki Sabzi Recipe – Ingredients, Method of Cooking

Ghatte ki Sabzi is a Rajasthani dish. This dish is very popular and we cannot miss this dish, when having a Rajasthani meal. It is very delicious and the ghatte are totally awesome. Ghatte are made with the besan and they are boiled first and then fried. These fried ghatte are added to the gravy.

Ingredients for making Ghatte ki Sabzi

For Ghatte

  • 100 grams Gram flour (Besan)
  • 15 grams Fresh Coriander Leaves (Dhania)
  • 10 grams Finely chopped Green Chillies
  • 10 grams Carom seeds (Ajwain)
  • 30 grams finely chopped Onion
  • 10 milliliter Olive Oil
  • Salt as per taste
  • 5 grams Cumin (Dhania) Powder
  • 10 grams Garam Masala

For Gravy

  • 200 grams Onion paste
  • 60 milliliter Olive Oil
  • 200 grams Tomato Puree
  • 5 grams Ginger-Garlic paste
  • 25 grams Salt
  • 20 grams Red Chilli Powder
  • 20 grams Coriander (Dhania) Powder
  • 10 grams Garam masala
  • 150 grams Yogurt (Curd/Dahi)

Method for making Ghatte ki Sabzi

For Ghatte

  • Take a bowl. Add gram flour with coriander leaves, green chillies, carom seeds, onion, salt, cumin powder and garam masala.
  • Mix well, by using little water and make a tight dough.
  • Make cylinder shape ghatte, from this dough.
  • Now boil these ghatte in water for nearly 20 minutes.
  • Remove, cool and cut each ghatte into 2.5 centimeter piece.
  • Now, heat oil in a kadai and fry these ghatte.
  • Drain on an absorbent paper, remove and keep aside.

For Gravy

  • Heat oil in a pan.
  • Add the onion paste. Saute till the onion turns golden brown color.
  • Now add the tomato puree and the ginger-garlic paste.
  • Add salt, red chilli powder, coriander powder, garam masala and yogurt.
  • Mix well by adding little water.
  • Cook till it comes to boil.

How to serve

  • Take a serving dish. Firstly, keep the ghatte and then pour gravy all over the ghatte.
  • Ghatte ki sabzi is ready to serve.
