Jhatpat Kachori / Special Kachori – Ingredients, Method of Cooking

Jhatpat Kachori is very delicious and good looking. It is eaten with chatpati tamarind (Imli) chutney. It is quiet different from the other kachories and even takes less time in preparation.

I love kachori a lot and i usually enjoy eating outside. But one day, when i tasted the kachori, made by my sister in law, it was so awesome and i could not recognize whether it is home made or bought from outside. I was so excited and eager to know the recipe and prepare for my husband. She gave me the recipe and i prepared it for my husband. He also loved it and now weekly once we sit together and enjoy the evening with Jhatpat Kachori.

Ingredients for making Jhatpat Kachori

1 packet Bread

For filling

  • 3-4 boiled and mashed Potatoes
  • 3-4 finely chopped Onion
  • 1/2 inch Ginger piece
  • 2-3 Greenchillies
  • a pinch of Asafoetida (Hing)
  • 1 teaspoon Garam masala
  • 1 tablespoon Coriander leaves
  • Salt as per taste
  • 2 tablespoon Oil

For making dough

  • 1/2 kg Maida
  • Oil as per the requirement
  • Salt as per taste

For frying

  • Oil for deep frying

Method for making Jhatpat Kachori

Firstly, we have to make the filling for the kachori. So, lets start.

For filling

  • Take a pan. Heat oil and add asafoetida. Add the onions and fry till they are translucent.
  • Add the ginger and greenchilli paste. Fry for some more time.
  • Add the mashed potatoes and saute for few minutes.
  • Add the garam masala, salt and coriander leaves.

For making Dough

Take a bowl. Add maida, salt and oil. Make a soft dough (not too soft), with the help of water and keep aside.

For making kachori

  • Take a small portion of dough and make a small roti.
  • Take a bread and cut it into a small circle shape, removing the sides. We can use a bowl or anything which is round and sharp to cut the bread in a circle shape.
  • Place this piece of bread into the maida roti, exactly in the middle.
  • Now on the bread, add the filling (potato mixture) and fold the sides of the roti to the middle. Just nicely press and roll slowly over it 2-3 times.
  • You can also make a different shape of it, any shape of your choice.
  • Now deep fry in a slow flame.
  • When they are dark brown, remove in an absorbent paper and serve hot.

How to serve

Serve hot kachories with tamarind chutney.
