Malai Kofta recipe – Ingredients, Method of Cooking

Malai kofta is delicious and gives a royal taste. It consists of a gravy, which is creamy and made using the tomatoes and cashewnuts. The koftas are very tasty and so can also be served along with tea. The koftas are made using the paneer and vegetables. This dish can be accompanied with naan or paratha.

Ingredients for making Malai Kofta

For Koftas

  • 1/2 cup grated Paneer (Cottage Cheese)
  • 1/4 cup grated carrot
  • 2 tablespoon finely chopped Capsicum
  • 1/2 cup boiled and grated Potatoes
  • 1 teaspoon Ginger (Adhrakh) paste
  • 1/2 teaspoon Garlic (Lahusan/Lasan) paste
  • 1 tablespoon Tomato Ketchup
  • 1 teaspoon Red chilli powder
  • a pinch of Turmeric (Haldi) powder
  • 1 tablespoon finely chopped Coriander (Dhania) Leaves
  • Salt as per taste

For Gravy

  • 2 large Onion paste
  • 5 large Tomatoes boiled
  • 1 tablespoon Ginger-Garlic-Green chilli paste
  • 2 Cloves (Laung/Lavang)
  • 1 inch Cinnamon (Dal chini)
  • 1 tablespoon Cashewnut (Kaju) paste
  • 1 teaspoon Sugar
  • 1 teaspoon Garam masala
  • 1 teaspoon Red Chilli Powder
  • 4 tablespoon Butter
  • Salt as per taste

For Garnishing

  • 1 tablespoon fresh Cream

Method for making Malai Kofta

For Koftas

  • Take a bowl. Add paneer, carrot, capsicum, potatoes, ginger paste and garlic paste.
  • Add tomato ketchup, red chilli powder, turmeric powder, coriander leaves and salt.
  • Mix well and make either cylindrical shape or round shape and deep fry them over a medium flame.
  • Fry till they turn golden brown. Drain on an absorbent paper and keep aside.

For the gravy

  • Blend the tomatoes into a puree.
  • Take a pan. Heat butter, add the cloves and cinnamon.
  • After sometime, add the onions. Saute for 2-3 minutes and then add the ginger-garlic-green chilli paste.
  • Saute till the colour changes to light brown.
  • Add the tomato puree and saute for sometime.
  • Add 1 cup of water and boil for sometime.
  • Now pour this mixture into a blender, by adding cashewnut paste and sugar. Blend this mixture and cook on the gas again.
  • Add the Garam masala, Red chilli powder, salt and cook for some more time.
  • Keep aside.

How to serve

  • Take a serving dish. Arrange the koftas and pour the gravy over it.
  • Use cream as a topping.
  • Serve hot with parathas, naan or any type of Indian bread.
