Navratan Korma Recipe – Ingredients, Method of Cooking

Navratan korma is made using nine different vegetables, fruits and nuts. The name itself gives an idea of nine things from “Navratan”. It is very delicious and healthy. The silver leaf which we have used for the garnish, totally changes the look of the curry. It gives a royal look and also tastes awesome. Along with the nine things, we have also used the paneer, which mingles well with the melange of vegetables and fruits.

Ingredients for making Navratan Korma

  • 1/2 cup Paneer (cottage Cheese) cut into 1/2 inch cubes
  • 1/2 cup French Beans cut into 1/2 inch pieces
  • 1/2 cup Carrots cut into 1/2 inch cubes
  • 1/2 cup Potatoes cut into 1/2 inch cubes
  • 1/2 cup Capsicum cut into 1/2 inch cubes
  • 1/2 cup Cauliflower florets
  • 1/2 cup broken Cashewnuts
  • 2 tablespoon Raisins
  • 3/4 cup boiled Green Peas
  • 1/4 cup Tomato puree
  • 1/2 cup yogurt (Curd)
  • 2 tablespoon Oil
  • Sugar as per taste
  • Salt as per taste
  • Oil for deep frying

To be ground to a fine paste

  • 1/2 Green chilli
  • 3 cloves Garlic
  • 1/2 inch Ginger piece
  • 1/2 teaspoon coriander seeds (Dhana/Dhania)
  • 1/2 teaspoon Cumin seeds (Jeera)
  • 1/2 teaspoon Caraway seeds (Shahjeera)
  • 1 green Cardamom (Elaichi)
  • 2 whole dry Red Chillies

For garnishing

  • 1/4 cup Pineapple pieces
  • 2-3 cherries
  • 1 sheet edible silver leaf (Varq)

Method for making Navratan Korma

  • Firstly we have to boil the vegetables: french beans, cauliflower, carrots and green peas.
  • When they are boiled, drain and keep aside.
  • Whisk the yogurt till smooth and keep aside.
  • Deep fry the paneer and potatoes separately and then remove, drain in an absorbent paper and keep aside.
  • Heat oil in a pan. Add the ground paste and fry for 2-3 minutes.
  • Now add the tomato puree and yogurt. Stir continuously till the mixture leaves oil.
  • Add the capsicum and saute for 1-2 minutes.
  • Now it’s time to add the vegetables, which we have boiled, potatoes, paneer, cashewnuts and raisins.
  • Add the peas, salt, sugar and 1/2 cup water.
  • Cook till it comes to boil.
  • Navaratan Korma is ready to serve.

Garnish

               Garnish Navratan Korma with silver leaf, pineapple pieces and cherries.
