Schzewan Vegetable Sauce Recipe – Ingredients, Method of Cooking

Schzewan Vegetable Sauce is an Indo Chinese version. Few vegetables are cooked in a sauce, giving a sour and sweet flavors. The vegetables here, are not to be overcooked. The schzewan vegetable sauce is generally taken with the noodles or fried rice.

Ingredients for making Schzewan vegetable sauce

  • 3 tablespoon Oil
  • 1 teaspoon Cashewnuts
  • 2-3 Dry red chillies
  • 1 medium sized onion ( take each layer out )
  • 1 medium size Capsicum
  • 4 Mushrooms ( optional )
  • 2 cup boiled vegetables ( carrot, beans, cauliflower ) cut in diamond shaped
  • 4 Baby Corn ( optional )
  • 1 teaspoon Peas
  • 1 cup Schzewan sauce / Schzewan masala
  • 1 1/2 cup Hot water
  • Salt as per taste
  • 1/4 teaspoon Aginomoto
  • 1/4 teaspoon White pepper powder
  • Pinch of Sugar
  • 1/2 teaspoon Red chilli powder
  • 1 tablespoon Tomato sauce
  • 1 tablespoon Red chilli sauce
  • Liquid Cornflour for thickening
  • 3-4 chopped Celery

Method for making Schzewan vegetable sauce

  • Heat oil in a pan. Add cashewnuts and dry chillies.
  • When it becomes pink add onion, capsicum and mushrooms. Saute for a minute.
  • Add boiled vegetables and saute for another 30 seconds.
  • Add Schzewan masala and hot water. Saute well.
  • Add salt, aginomoto, sugar, white pepper powder, red chilli powder, tomato sauce, red chilli sauce and liquid corn flour for thickening.
  • Add celery.
  • Garnish with spring onion
