Shahi Paneer Recipe – Ingredients, Method of Cooking

Shahi paneer has a thick gravy, which is made using the cream and the spices. Shahi is the Indo-Persian term for royal and the paneer is the other name for cottage cheese. It is very popular in North India. It is generally eaten with the roti, chapati or any type of Indian bread. It is a sweet curry, that is, generally this is a white gravy and it is less spicy compare to other curries.

Ingredients for making Shahi Paneer

  • 400 grams Paneer (Cottage cheese) cut into one inch long pieces
  • 2 big roughly chopped Onions
  • 2 tablespoon Oil
  • 3 Cloves (Lavang, Laung)
  • 2 Cinnamon sticks one inch
  • 4-5 Black peppercorns
  • 1 Bay leaf (Tej patta)
  • 2 slit Green chillies
  • 1 teaspoon Garlic paste (Lahusan, Lasan)
  • 1 teaspon Ginger paste (Adhrakh)
  • 1/4 cup Cashewnut paste (Kaju paste)
  • 1/2 cup Yogurt (Dahi/Curd)
  • 1/2 cup Cream
  • 1/2 teaspoon Garam masala powder
  • 1/4 teaspoon Cardamom powder (Green)
  • a pinch of Saffron (Kesar)
  • Salt as per taste

Method of making Shahi Paneer

  • Boil the onions in required water and then drain and allow to cool.
  • Now grind to a fine paste.
  • Heat oil in a pan. Add the cloves, cinnamon, black peppercorns and bay leaf.
  • Then add the green chillies and the onion paste. Saute on a low flame for 4-5 minutes.
  • Carefully observe that the colour of the onion may not change.
  • Add the ginger paste and garlic paste and saute for half a minute.
  • Now add the cashewnut paste and saute for another two minutes.
  • Add the yogurt and saute for nearly 5 minutes.
  • Add the cream and stir well. Also add the garam masala, saffron and salt.
  • Add the paneer and saute for sometime.
  • Sprinkle green cardamom powder and the shahi paneer is ready to serve.
