Soya sauce / Soy sauce

Soya sauce is also called as “Soy sauce” or “Tamari”. It is prepared from soya beans/soybeans. Soya sauce is a traditional ingredient in East and Southeast Asian cuisines. Soya sauce is a condiment, which is made from a fermented paste of boiled soy beans, roasted grains, brine and Aspergillus oryzae. After the completion of fermentation process, the paste is pressed, producing a liquid which is called soya sauce.

Light soy sauce has a lighter color and a salty flavor. It is used more in cooking. It is also used for marination purpose, cooking and dipping.

Dark Soya sauce
Dark soy sauce has a thicker texture. It is used generally for its darker colour rather than its taste. If used in excess, it can taste a bit bitter. Even in some dishes, the dark soy sauce is used only for presentation.
