Vegetable Pulao Recipe – Ingredients, Method of Cooking

Vegetable Pulao is very simpe recipe but gives awesome flavor. It is a quick and delicious recipe. Here, we have used the vegetables and the spices which gives a fine flavor to the pulao.

Vegetable Pulao

Ingredients for making Vegetable Pulao

  • 1 cup Basmati Rice
  • 1 sliced Onion
  • 3 slitted Green chillies
  • 1 1/2 cup chopped mixed Vegetables (Carrot, Beans, Peas, Corn)
  • 1 1/2 cup Coconut milk
  • 2 Cardamom (Elaichi)
  • 2 Cloves (Lavang/Laung)
  • 1 Bay leaf
  • 1 tablespoon Oil
  • Salt as per taste
  • 1 teaspoon Ghee

For Grinding

  • 1 small piece Cinnamon (Taj)
  • 4 Garlic (Lahusan/ Lasan)
  • 1 inch piece Ginger (Adhrakh)

Method for making Vegetable Pulao

  • Wash and soak the rice for at least 1 hour.
  • Grind the ingredients under grinding with little water to a fine paste.
  • Heat oil in a pressure cooker.
  • Add cardamom, cloves and bay leaf.
  • Now add the onions and fry till they turn transparent.
  • Add the grinded paste and saute well.
  • Add the vegetables and fry for sometime.
  • Drain water from the rice and add to the vegetables. Mix thoroughly.
  • Add coconut milk and let it cook.
  • Add salt and when it comes to boil close the lid of the pressure cooker and cook for nearly 15 minutes in a slow flame.
  • When its done put off the gas add ghee and mix well.

Tips

  • You can also use normal water instead of coconut milk.
  • You can give a pressure cooker two whistles in a medium flame instead of keeping it for 15 minutes in a medium flame.
