Vegetarian Vegetable Soup Recipe – Ingredients, Method of Cooking

Vegetarian Vegetable Soup is a healthy soup. As, it consists of vegetables, can be easily given to children without any second thought, due its healthiness. It has an excellent combo of tomatoes and vegetables. Here, i have used the vegetables: cabbage, tomatoes and carrot in this soup. But we can also have some more additions, if needed. The soup brings an entirely different identity for the same vegetables which are not eaten or liked by the children, but they readily have it when in form of a soup. Consuming soup on a cold day has its own pleasure. So, enjoy the first rainfall in this rainy with this hot soup.

Ingredients for making Vegetarian Vegetable Soup

  • 1/2 cup finely chopped Onions
  • 2 cups chopped Tomatoes
  • 1/2 cup Shredded Cabbage
  • 1/2 cup grated Carrot
  • 1 Bay leaf (Tej patta)
  • 2 Cloves (Lavang/Laung)
  • 4 Black Pepper (Kalimirch)
  • 1 inch Cinnamon stick (Dalchini)
  • 2 tablespoon Oil
  • Liquid Cornflour (1 tablespoon Cornflour added  to 1/4 cup of cold water)
  • Salt as per taste

Method for making Vegetarian Vegetable Soup

  • Take a pan. Add the tomatoes and 4 cups of water. Bring it to boil and cook for nearly 8-10 minutes.
  • After the tomatoes are cooked, allow them to cool. Now blend in a blender into a smooth paste and keep aside.
  • Heat oil in a pan, add bay leaf, cloves, black pepper, cinnamon and mix well. Saute on a medium flame for few seconds (This is because if they are done in full flame they might burn).
  • Now add the onions and saute for sometime.
  • Add the cabbage, carrots and mix thoroughly. This should be cooked on medium flame and stir occasionally.
  • Add tomato paste and the liquid cornflour, mix well.
  • Add the salt and cook for sometime.
  • Serve hot and garnish with cheese.
